Preheat oven to 220C.
Cut the swede into 1cm thick rectangles, toss in oil then arrange on a lined baking sheet so that there is space between each slice – this prevents them from steaming and turning to mush! Season liberally with sea salt and freshly cracked black pepper.
Roast for 10 minutes, then rearrange slices as necessary according to your oven’s hot spots. The middle of my pan of swede didn’t have much colour, but the edges did so I moved the pieces around to get an even colour.
Continue to roast for 5 – 10 minutes, depending on how crispy you like your chips.
