Ingredients
230g spinach leaves, washed, stems removed and leaves chopped
15g butter
1 tbsp plain flour
65ml double cream or milk
1 shallot, finely chopped
50g cheddar, grated
1 tbsp dried breadcrumbs
a large pinch paprika

STEP 1 Heat a very large pan then tip in the spinach with a splash of water. Stir until completely wilted then cool and squeeze out all the excess water (a clean tea towel is good for this).
STEP 2 Heat the oven to 190c/fan170c/gas5. Melt the butter in a saucepan, stir in the flour and cook for 2 minutes. Whisk in the cream or milk, then simmer for a couple of minutes until the mixture thickens. Add the shallots, spinach and most of the grated cheddar. Stir in the spinach. Spoon into a medium baking dish or 2 individual ones. Mix the breadcrumbs, remaining cheese and paprika then sprinkle it over the top.
STEP 3 Bake in a large dish for 40 minutes or until golden, or 25 minutes for the individual ones.
