First, toast your sesame seeds. Heat a dry pan and add the seeds. Watch them closely and stir often, as they go from raw to burnt very quickly. When toasted and golden brown, remove from heat and keep to one side.
Wash your spinach well. Boil water in a large pot, and add the spinach. Cook for a few minutes until the spinach is wilted, then drain well. Run under cold water to cool the spinach down.
Place your spinach in a line on a clean tea towel, and wring out to remove as much water as possible. Chop the spinach coarsely.
In a bowl, combine the spinach, minced garlic, and sesame oil. Salt to taste.
Serve as a side dish, on rice, or as part of a bibimbap.
