Garlicky Roasted Green Beans

by Saoirse at Locavore

Ingredients

200g green beans, washed and with the stems trimmed off
Olive oil
Salt and pepper
1-2 cloves garlic
2 tablespoons finely grated parmesan, or 1 tablespoon nutritional yeast

Directions

Preheat the oven to 200°C (190 fan).

Wash your green beans and trim the stem-ends. Peel and finely mince your garlic, or grate with a microplane.

Toss the green beans in the oil, with a pinch of salt and a grind of black pepper, the garlic, and parmesan or nutritional yeast. Lay them in one layer on a baking tray, making sure there's a little room between them so they don't steam.

Roast for 20 minutes or until cooked-through and a little bit crispy. Serve hot.

My favourite part is the beautiful and tasty veg! I feel good cooking fresh veg and the range of vegetables are great
