Celeriac Remoulade

Ingredients

1 celeriac
100ml mayonnaise
Juice of 1 lemon
3 tbsp mustard (I prefer dijon)
salt and pepper

Directions

Wash and peel your celeriac, removing any roots. Use a grater or food processor to shred the celeriac, then add pop it in a bowl with plenty of room.

Add the mayonnaise, lemon juice, mustard, and a little salt and pepper. Stir well, taste, and adjust seasoning. It may need a little more mustard or lemon.

Serve right away or store covered in the fridge for up to 2 days.
