Bubble and Squeak

Ingredients

Leftover mashed potatoes - about 400g but whatever you have will work
Leftover cooked cabbage (sauteed, boiled, steamed, or roasted) - about 100g
Butter or vegan block

Directions

Chop your cooked cabbage into small pieces, then mix through the mashed potatoes. If needed, adjust the seasoning.

Melt your butter or vegan block in a non-stick or well-seasoned frying pan (anything that you could eg. fry an egg in). Take large spoonfuls of the potato mixture, flatten them into rounds, and fry until crisp and golden, turning halfway.
