2 tbsp oil
4 baby leeks sliced into rounds
4-5 medium potatoes sliced into rounds
1-2 tbsp chopped fresh herbs of choice (thyme / rosemary / oregano etc)
1 tsp salt
1/4 tsp Black Pepper
375 ml chicken / veg stock
